Katmer with Tahini

March 16, 2026

Tahini Katmer, one of the beloved flavors of Turkish cuisine, is a delicious pastry frequently preferred, especially at breakfast tables and tea time. This treat, resulting from the combination of thinly rolled dough, high-quality tahini, and sugar, is both practical and quite filling.

The aroma of katmer becomes much richer when high-quality tahini, especially that made from natural sesame seeds, is used. Prepared with tahini carefully produced by İnci Gıda, tahini katmer brings traditional flavor to your tables.

Ingredients Needed for Tahini Katmer

For the dough:

  • 4 cups of flour

  • 1 cup lukewarm water

  • 1 teaspoon salt

  • 2 tablespoons vegetable oil

For the filling:

  • 1 cup tahini

  • 1 tea glass of granulated sugar

  • 2 tablespoons vegetable oil

For cooking:

  • Butter or vegetable oil

How to Make Tahini Katmer?

1. Prepare the dough
Take the flour into a large bowl. Add salt, vegetable oil, and lukewarm water and knead into a soft dough.

2. Let the dough rest
Let the prepared dough rest, covered, for approximately 20-30 minutes. Resting the dough makes it easier to roll out.

3. Prepare the dough balls.
Divide the dough into equal balls the size of a tangerine.

4. Roll out the dough thinly.
Roll out each ball as thinly as possible with the help of flour.

5. Add the tahini mixture.
Spread tahini on the dough and sprinkle with powdered sugar.

6. Shape into a katmer.
Roll the dough into a roll, then twist it around itself to form a rose shape. Then gently press and open it again.

7. Cook in a pan
Cook in a heated pan with a little oil until both sides are browned.
